Fruits and vegetables are some of the most neglected areas of our diet. Very few people eat enough of these foods that are vital for our good health. Consequently many people have underlying health problems but cannot always understand why.

Why eat fruits and vegetables? These foods contain valuable vitamins and minerals that are essential to the functioning of our bodies and maintenance of our health.
So what are the benefits of eating fruits and vegetables?

Vitamin C: is an antitoxin and as such will stimulate your immune system and get rid of free radicals. It also helps your adrenal glands to function properly. Vitamin C keeps muscles and body tissue healthy. This vitamin can be found in many fruits and vegetables.

Vitamin D: makes your bones strong and is good for your general health.

Vitamin E: is another anti toxin and is also good for your skin and heart. It can be found in a variety of fruits and vegetables, including citrus fruit like grapefruit.

Vitamin A: is a powerful anti toxin and helps you see well. It can be obtained from carrots and tomatoes and other fruits and vegetables.

Minerals

Iron: helps to retain oxygen in the blood and when we have a deficiency of iron we feel cold and lack energy. Apples and bananas are high in this mineral. Other fruits and vegetables that have iron are prunes and apricots.

Calcium: is necessary for strong bones and can also have a calming effect on your body. You can find this in fruits and vegetables like broccoli.

Potassium: It is an extremely important mineral and is vital to the body’s functions in the following ways; fluid and electrolyte balance, prevents cramping in the muscles, and helps to regulate blood pressure. It can be found in fruits and vegetables such as bananas.

Trace minerals: there are certain trace minerals the body needs in small amounts. Examples are; magnesium, copper and zinc. These trace elements can be found in many Fruits and vegetables.


Ways to eat fruits and vegetables: there are a variety of ways to eat these foods. The best way is to eat them fresh. This is because cooking will destroy some vitamins especially vitamin C. If you are not very keen to eat fruits and vegetables alone you can add them to many foods such as yogurt and cereal. Plus you can make nutritious juice from them with your own juice processor. Goji juice and berries are particularly nutritious fruits and will provide you with many vitamins and minerals.
